As if Las Vegas hotels do not have enough fantastic five-star restaurants to choose from, the opening of Encore will infuse a new lineup of flavors to the Strip. Five new chefs will bring savory Asian, casual American, and delicious Italian cuisine to the new hotel that is expected to open its doors in December. 
Theo Schoenegger, a four-star chef from Los Angeles, is bringing Italian to an entirely different level. His reconstructed blend of old Italian favorites will create a scrumptious, well-refined menu of fabulous dishes. Theo emphasizes freshness by bringing in seasonal, greenmarket veggies from California and providing guests with a market-driven menu.
Jet Tila, who specializes in Asian cuisine, will be opening a modern Asian bistro – Wazuzu. Named after a Chinese word for “Nine Dragons,” this casual restaurant will bring guests the very best of Thai, Chinese, Japanese, Vietnamese, Korean and Indian cuisines. In admiration of the “Nine Dragons” painting, a large crystal dragon will adorn the wall.
Marc Poidevin, Wynn's executive chef of catering and special events, will open Switch, a restaurant that caters to French cuisine enthusiasts. This steakhouse and seafood restaurant will undergo a transformation nightly converting tables and walls into a dramatic dinner theater experience.
Mark LoRusso, former executive chef of Tableau at Wynn Las Vegas, will be cooking at the Botero Steak, named after Colombian artist Fernando Botero. This new restaurant will offer the best of steakhouse cooking and sophisticated dinning in a room that overlooks the Encore pool.
Kim Canteenwalla, who is planning a casual American restaurant, will offer guests some old-school classics with a modern twist. The restaurant will provide satisfying food in a fun and casual atmosphere.
